A Mediterranean-themed café from award-winning, local chef Gavin Kaysen will open next year in the RBC Gateway, a 37-story, multi-use tower currently under construction.

Kaysen is also planning a full-service restaurant and bar that will launch alongside the opening of the building’s Four Seasons Hotel in mid-2022. The hotel, along with the building’s developer, Minneapolis-based United Properties, are partnering with the chef on both dining options.

“There’s a lot of opportunity for us to think creatively and openly on how we want to create food, what we want it to taste like, what we want the space to feel like,” he said. “This was an idea that I had a while back to create a café that will … match what we’re going to do in the restaurant.”

With over 20 countries on the Mediterranean Sea, the café’s menu will have numerous influences like those from Northern African and Southern European countries. His team will start menu development early next year in his Spoon and Stable kitchen, while the café’s kitchen is still under construction, he said.

“It’s a lot of different cultures and spices and things like that,” he said. “I love that kind of food and I love what we’re going to create there.”

The café, whose name is not being disclosed, will be located in the lobby of the tower and will offer both indoor and outdoor seating. New York-based AvroKO helped design the space.

Everything the café offers will be “grab and go,” with likely visitors to the space including people who work and live in the area.

Before fully opening, the café will start by serving only coffee to office tenants of the building as work on the kitchen wraps up. Office tenants begin moving into the building in late February, he said.

Kaysen also owns and operates Spoon and Stable, Demi and Bellecour Bakery. He’s also received recognition with two James Beard Awards.

Once complete, RBC Gateway will have 532,000 square feet of office space, with tenants including RBC Wealth Management, JLL, Castlelake and Pohland Cos. The building will also have the hotel and over 30 private residences.
